Ausone 2015 comes from steep, terraced vineyards set on a mix of limestone and clay-limestone soils on the plateau and slopes above Saint-Émilion—a terroir famed for delivering both intensity and minerality. Yields are kept very low and harvesting is carried out by hand, parcel by parcel, to ensure only perfectly ripe, healthy grapes are selected. The blend is 50% Cabernet Franc and 50% Merlot. Fermentation typically takes place in temperature‑controlled vats, with careful extraction to preserve finesse and aromatic purity. The wine is then aged for around 20 months in French oak barrels, about 85% of which are new, allowing the powerful fruit, fine tannins and oak spice to harmonize into a seamless whole.

Ausone 2015 is a natural match for refined, protein‑rich dishes that can stand up to its depth and structure. Think dry‑aged ribeye or côte de boeuf, roast lamb with rosemary and garlic, venison or other game, truffled poultry, or classic dishes like beef Wellington and mushroom‑based preparations.
