Description

Tasting Notes
In the glass, the 2011 Ausone DBMG reveals a saturated purple-ruby core that clings to the sides, hinting at its concentration and youthfulness even at this stage. The nose is hauntingly complex: ripe blackcurrant, black cherry and damson plum are interwoven with violets, graphite, crushed stone, fine cedar spice and a delicate hint of cocoa and tobacco leaf.
On the palate, this wine is both powerful and poised. Dense black and blue fruits are framed by ultra-fine, velvety tannins and a vibrant, limestone-driven freshness. Layers of dark berry compote, wild herbs, licorice and subtle baking spices unfold gradually, finishing with remarkable length and a lingering mineral salinity. The tannin quality and purity of fruit mark this as a wine with formidable aging potential; in double magnum format, it can easily evolve gracefully for 30–40 years or more, gaining additional complexity and secondary nuances of truffle, leather and cigar box over time.
Production
Château Ausone sits on the steep, south-east facing limestone slopes of Saint-Émilion, a terroir that imparts its wines with both intensity and a signature mineral backbone. The vineyard is planted predominantly to Cabernet Franc, complemented by Merlot, on a mosaic of limestone and clay over solid rock, with extremely low yields. All fruit is harvested by hand in multiple passes to ensure perfect ripeness, then carefully sorted berry by berry. Vinification takes place in small, temperature-controlled vats, allowing parcel-by-parcel precision, followed by élevage in a high proportion of new French oak barrels. The result is a wine of great concentration and refinement, further enhanced by the slower evolution and grace afforded by the 3L double magnum format.

Ausone 2011 in double magnum is a natural partner for refined, flavourful dishes such as roast lamb with rosemary, beef tenderloin, pigeon or duck, and game birds with wild mushrooms or black truffle. It also pairs beautifully with aged hard cheeses and dishes based on earthy root vegetables and lentils. Serve at 16–18°C (60–64°F) to showcase its aromatic complexity; due to the larger format and youthful structure, decanting for 2–4 hours is recommended to allow the wine to fully unfurl and reveal its layered character.
