Attems Sauvignon Blanc 2025 is a bright, characterful white wine from Friuli-Venezia Giulia that captures the elegance of Collio, one of Italy’s most respected cool-climate wine areas. Made from 100% Sauvignon Blanc under the Attems - Frescobaldi name, it combines aromatic precision with freshness and regional authenticity.

Tasting Notes
Pale straw yellow in the glass with beautiful green reflections, this Sauvignon Blanc is lively and expressive from the first pour. The nose is distinctly varietal, offering notes of boxwood, tomato leaf, and an intense lift of grapefruit peel. On the palate, it is crisp and vibrant, with a marked, refreshing acidity that gives the wine tension and drive. Delicate lime blossom and lime add nuance to the long, energetic finish. While already appealing in its youth, it should also hold its freshness well over the next few years.

Production
The grapes are hand-harvested from mid-August through the first ten days of September, reflecting careful timing to preserve aromatic intensity and natural acidity. A small portion of the pressed grapes undergoes brief cold maceration under protective conditions, followed by gentle pressing and settling of the must for 24–48 hours before fermentation at 18°C for 15 days. The wine then spends four months on fine lees, with regular stirring, to add texture and depth.

Food & Serving
This Sauvignon Blanc pairs beautifully with shellfish, grilled white fish, herb-driven dishes, asparagus, fresh goat cheese, and light Mediterranean cuisine. Serve well chilled at around 8–10°C to highlight its aromatic freshness and vibrant acidity; decanting is not necessary.
