Grapes are harvested by hand with rigorous selection in the vineyard and at the sorting table to ensure only perfectly ripe, healthy fruit. Vinification typically involves traditional Burgundian methods: fermentation in open vats with gentle extraction to preserve finesse, followed by élevage in French oak barrels, a portion of which are new, bringing structure and subtle, creamy oak nuances without overwhelming the purity of the fruit or the character of the terroir.
