This premier cru, poised on the cooler side of Gevrey, is prized for its tension, depth and longevity, and in 2021 it shows particular finesse and clarity. Combining old-vine concentration with an elegant, restrained vintage profile, it offers a beautifully detailed expression of Pinot Noir and of this famed terroir.

Tasting Notes
In the glass, the 2021 Lavaux St. Jacques is a vibrant, translucent ruby with youthful brightness at the rim, hinting at both purity and precision. The nose opens with perfumed notes of ripe plum and wild red berries, followed by orange zest, gentle woodsmoke, and delicate hints of clay-rich earth and polished, creamy oak. Subtle floral top notes and a fine mineral streak glide in with air, underscoring its premier cru pedigree. On the palate, this is medium to medium-plus in body, supple and charming yet firmly structured, with a poised, energetic core of red and dark berry fruit. Silky, powdery tannins frame flavors of crushed raspberry, plum, blood orange and a touch of spice, while bright, clear acidity keeps everything lifted and precise. The finish is long, stony and refined, suggesting excellent development over the next 10–15 years, with the potential to age gracefully even longer in a well-kept cellar.

Production
Lavaux St. Jacques is one of Gevrey-Chambertin’s most esteemed premier crus, lying on a well-exposed, cool, limestone-rich slope that channels fresh air down the valley, giving wines of both power and tension. Armand Rousseau works primarily with old-vine Pinot Noir, rooted in a mosaic of limestone, clay and marl that contributes depth and minerality. Grapes are harvested by hand with rigorous selection in the vineyard and at the sorting table to ensure only perfectly ripe, healthy fruit. Vinification typically involves traditional Burgundian methods: fermentation in open vats with gentle extraction to preserve finesse, followed by élevage in French oak barrels, a portion of which are new, bringing structure and subtle, creamy oak nuances without overwhelming the purity of the fruit or the character of the terroir.

Food & Serving
This Gevrey-Chambertin 1er Cru is a superb partner for refined dishes that highlight its aromatic complexity and delicate structure: roast duck with cherries or orange, guinea fowl, herb-crusted lamb, veal with morel mushrooms, or classic Burgundian fare such as coq au vin and boeuf bourguignon. It also pairs beautifully with mushroom-based dishes, truffled poultry and aged semi-hard cheeses like Comté. Serve at 15–16°C (59–61°F) to showcase its elegance and aromatic lift. Decanting for 45–60 minutes in its youth can help the wine open up and soften the tannins; with more bottle age, a brief, gentle decant is sufficient to remove sediment and allow the bouquet to bloom.
