Tasting Notes
In the glass, André Beaufort Champagne Polisy Brut Rosé typically shows a luminous salmon-pink to pale copper hue, with a fine and persistent bead. On the nose, this wine is generous yet refined: wild strawberries, crushed raspberries, and redcurrant intermingle with notes of blood orange zest, rose petals, and a subtle hint of brioche, honeycomb, and dried herbs. With air, more complexity emerges—soft spice, chalk dust, and a faint, savory autolytic note. On the palate, the Brut Rosé is dry but not austere, with a supple, vinous texture that speaks clearly of Pinot Noir and long lees aging. Production
The grapes for André Beaufort Champagne Polisy Brut Rosé come from vineyards around Polisy in the Aube, the southernmost part of Champagne, where Kimmeridgian limestone and clay soils share a kinship with those of nearby Chablis. These soils, combined with a cooler climate and relatively high proportions of Pinot Noir, give the wines both structure and a distinctive mineral tension. Beaufort has been working organically for decades, often incorporating biodynamic principles: no synthetic herbicides or pesticides, deep respect for biodiversity, and meticulous handwork in the vines. Harvest is carried out by hand at full physiological ripeness to ensure concentration and balance with naturally vibrant acidity. In the cellar, fermentation typically occurs with indigenous yeasts, and the estate favors gentle pressing, minimal intervention, and extended lees aging to build texture and complexity. The rosé hue is usually achieved via careful short maceration or the addition of a small proportion of still red Pinot Noir from the estate, followed by secondary fermentation in bottle and aging on lees before disgorgement, with modest dosage to preserve the wine’s precision.

Food & Serving
This Brut Rosé is a versatile food Champagne, equally at home as an aperitif or at the table. Its red-berry profile and fine structure make it an excellent partner for dishes such as tuna tartare, salmon gravlax, charcuterie, roast chicken with herbs, or duck breast with cherries. It also works beautifully with sushi, lightly spiced Asian dishes, and creamy soft cheeses like Brie de Meaux or Chaource. Serve well-chilled but not icy, ideally around 8–10°C (46–50°F), to allow the aromatics and texture to express themselves. A brief 10–15 minutes in the glass or a wide Champagne tulip is generally sufficient; full decanting is not essential but very gentle aeration can help the wine open and reveal its more complex, savory notes.
