Description
Andre Beaufort Champagne Polisy Brut Nature Reserve is a characterful grower Champagne from the Côte des Bar, in the southern reaches of Champagne. Sourced from organically farmed vineyards around the village of Polisy in the Aube, it marries Pinot Noir and Chardonnay in a bone-dry, no-dosage style that highlights purity and terroir. This cuvée reflects Beaufort’s long-standing commitment to natural, minimal-intervention methods in a region better known for polished grandes marques.
Tasting Notes
In the glass, Polisy Brut Nature Reserve shows a luminous straw-gold hue with a fine, persistent bead. The mousse is delicate yet energetic, forming a gentle, creamy crown.
The nose is complex and expressive, offering notes of ripe orchard fruit (pear, yellow apple) and citrus zest, layered with white flowers, fresh bread dough, and a subtle, earthy chalk–clay minerality. With air, hints of dried herbs, honeycomb, and a touch of brioche emerge. On the palate, this is dry and incisive, with a firm, Pinot Noir–driven backbone wrapped around a core of juicy stone and orchard fruits. Chardonnay brings lift and tension, with bright acidity and a saline, mouthwatering finish. The texture is both vinous and refined, showing the influence of barrel and extended lees aging. While already very enjoyable on release, it has the structure and freshness to evolve gracefully for 5–7 years in a cool cellar, gaining additional complexity and tertiary notes.
Production
The grapes for Polisy Brut Nature Reserve come from organically cultivated vineyards in Polisy, in the Aube sector of the Côte des Bar, where clay-rich soils overlay limestone and give the wines depth, flesh, and a distinctive earth-mineral character. Vines are farmed without synthetic chemicals, and Beaufort famously relies on homeopathic preparations and even aromatherapy in the vineyard. Harvest is entirely manual, with careful selection of bunches. After pressing, the must is allowed to settle for about 12 hours so the coarser solids drop out, preserving purity. Fermentation is spontaneous, parcel by parcel, in a mix of stainless steel and wooden barrels. To avoid high sulfur additions, Beaufort encourages spontaneous malolactic fermentation in the base wines, softening acidity and adding texture. The second fermentation in bottle follows the traditional Champenoise method, and the wine rests on its lees for around 24 months. Disgorgement is often done à la volée (by hand, without freezing the neck), a historic technique that allows the cellar team to ‘listen’ to each bottle and fine-tune the final wine with exceptional sensitivity.
Food & Serving
Polisy Brut Nature Reserve’s dry, precise profile makes it a versatile table Champagne. It shines with simple, ingredient-driven dishes: oysters and shellfish, crudo or sashimi, tartare of sea bream or tuna, and steamed or grilled white fish. The Pinot Noir component also makes it a fine match for poultry (roast chicken, guinea fowl), charcuterie, and soft-rind cheeses like Brie or Chaource. Serve well-chilled, around 8–10°C (46–50°F). A brief time in the glass is usually enough to let it open; decanting is generally unnecessary, though pouring into larger white wine glasses rather than narrow flutes will help reveal its complexity.
