Tasting Notes
In the glass, the 2003 Ambonnay Grand Cru shows a deep golden hue with a fine, persistent mousse, reflecting both its age and extended lees contact. The nose is generous and layered: ripe orchard fruits (baked apple, pear), candied citrus, and apricot are wrapped in notes of brioche, toasted nuts, acacia honey, and a subtle oxidative, biscuity complexity typical of a well-developed vintage Champagne.
On the palate, this is a rich, vinous style of Champagne, with the Pinot Noir providing structure, red-fruited undertones and a gentle spice, while Chardonnay brings lift and a saline, chalky edge. Flavors of caramelized apple, quince, citrus peel, roasted hazelnut and light spice unfold over a broad, creamy texture, balanced by a still-vibrant acidity that keeps the wine precise rather than heavy. The warm 2003 vintage gives a generous, almost plush mouthfeel, leading to a long, savory, mineral finish. Production
Andre Beaufort farms his Grand Cru parcels in Ambonnay organically and with a strong biodynamic influence, a rarity in Champagne and a key to the distinctive personality of his wines. The vineyards sit on classic chalk and limestone-rich soils, with excellent drainage and exposure that promote concentration and ripeness while preserving tension. Grapes are harvested by hand at optimal maturity, with rigorous selection in the vineyard to ensure only perfectly healthy fruit makes it into the press. Vinification traditionally takes place with a focus on minimal intervention: slow, natural fermentations (often using ambient yeasts), limited or no chaptalization in ripe vintages like 2003, and a restrained approach to sulfur. The base wines are aged sur lies before the secondary fermentation in bottle, followed by extended lees aging to build complexity, texture and fine mousse. Dosage is kept at a Brut level, allowing the expression of the warm 2003 vintage and Ambonnay’s chalky terroir to shine through.
Food & Serving
This mature, structured Champagne is an excellent partner for rich dishes: think roasted poultry with morel cream sauce, veal in a light jus, lobster or scallops with butter and herbs, or truffle-inflected risottos. It also works beautifully with aged hard cheeses such as Comté or Gruyère, and with refined charcuterie or pâté en croûte. Serve at 10–12°C (50–54°F) to fully reveal the wine’s aromatic depth and texture; serving it too cold will mute its complexity. A gentle decant in a chilled carafe, or simply opening the bottle 20–30 minutes before serving in larger white-wine style glasses, can help the mature bouquet unfurl.

The Beaufort family has been growing vines in Ambonnay, one of Champagne’s most esteemed Grand Cru villages, since the mid-20th century. Andre Beaufort was one of the early pioneers of organic and later biodynamic viticulture in the region, converting his vineyards long before it became fashionable and standing apart from many larger houses that favored more intensive farming. This commitment to living soils, low yields and minimal-intervention cellar work has earned the domaine a cult following among Champagne connoisseurs. Today, the Beauforts are widely regarded as benchmark grower-producers, known for Champagnes that are unapologetically individual, deeply expressive of terroir, and often among the most characterful wines in the Montagne de Reims.
