This 2017 Brut blends power and precision, capturing the character of a notable Champagne harvest in a finely sculpted, gastronomic style. Its focus on one grape, one village, and one year gives it a distinctive identity among premium grower and boutique Champagnes.

Tasting Notes
In the glass, this Champagne shows a luminous, pale gold hue with subtle copper reflections, crowned by a fine, persistent mousse. The nose opens with red apple, ripe pear, and white peach, followed by notes of wild strawberry, brioche, and toasted hazelnut, with a hint of chalky minerality and a touch of citrus zest. On the palate, the Pinot Noir from Aÿ delivers both structure and generosity: expect a silky yet firm attack, with flavors of redcurrant, blood orange, stone fruit, and pastry cream, wrapped in a lively, well-integrated acidity. The Brut dosage keeps the wine dry and focused, allowing the ripe 2017 fruit and the Grand Cru terroir to shine. Sourced exclusively from Grand Cru vineyards in Aÿ, this Champagne is rooted in some of the region’s most prized Pinot Noir terroir, where chalk and limestone-rich soils underlie south-facing slopes that capture optimal sunlight. Grapes are harvested by hand at optimal ripeness to preserve both freshness and aromatic intensity, with strict selection in the vineyard. The must is gently pressed, and fermentation typically takes place in temperature-controlled vessels to retain purity of fruit, with careful handling to protect the natural structure of Pinot Noir. The wine then spends extended time on its lees in bottle—traditional for a Millésimé Champagne—adding texture, complexity, and fine bubbles before disgorgement and a balanced Brut dosage.

This vintage Brut from Grand Cru Aÿ is a versatile food Champagne, particularly well-suited to refined, savory dishes. Pair it with sushi and sashimi, tuna tartare, or salmon gravlax to highlight its freshness and structure, or try it alongside roast chicken, veal in a light cream sauce, or seared scallops with beurre blanc for a more indulgent match.
