In the glass, the 2020 Cornas Chailles shows a deep, bright ruby color that signals both concentration and freshness. The nose is lifted and perfumed, with lively smoky notes wrapped around dark berries—think blackberry and black cherry—alongside candied violets, licorice, black olive and a touch of baking spice.
On the palate, it is juicy, precise and tensile, with a lovely combination of richness and energy. Flavors of ripe blackberry, cherry-cola and dark plum are laced with cracked pepper, licorice, savory herbs and a vibrant, stony minerality. Production
Cornas Chailles comes from steep, sun-drenched slopes of decomposed granite—locally called “chailles”—in the Cornas appellation of the Northern Rhône, a terroir that naturally yields intense yet finely etched Syrah. The vineyards are farmed organically (and often biodynamically) with an emphasis on low yields and meticulous hand work on the terraces. Grapes are hand-harvested at optimal ripeness and carefully sorted, with around 20% of the bunches fermented as whole clusters to enhance aromatic lift, structure and spice. Fermentation typically takes place with indigenous yeasts, followed by aging in mostly older oak (often large foudres and neutral barrels) to preserve purity of fruit and the granite-driven minerality, rather than mark the wine with heavy wood.
Food & Serving
This Cornas is a natural partner for robust, flavorful dishes: think roast lamb with herbs, grilled ribeye, duck breast with black pepper and cherries, game birds, or slow-braised beef and lamb shanks. Its smoky, savory edge also works beautifully with charred vegetables, hearty stews, wild mushrooms and aged hard cheeses. Serve at 16–18°C (about 60–64°F) to highlight its aromatics and freshness; in magnum, decanting for 1–2 hours is recommended in its youth to let the wine open fully, while older bottles may need a gentler, shorter decant to separate them from any sediment.
