Tasting Notes
In the glass, this Cornas is a deep violet-purple, almost opaque at the core, with a vibrant rim that hints at its youthful energy. The nose is intensely perfumed, bursting with mineral-tinged black and blue fruits—think blackberry, boysenberry, and blueberry—layered with black olive tapenade, exotic spices, and lifted floral notes of violet and lavender.
On the palate, it is at once sweet-fruited and incisive, with concentrated flavors of boysenberry, kirsch, and dark fruitcake wrapped around a core of juicy, mouthwatering acidity. The texture is powerful yet controlled, with firm, chewy tannins giving structure and definition. A long, smoky finish echoes with floral, spicy, and stony mineral nuances. Production
Cornas is one of the Northern Rhône’s most dramatic terroirs, with steep, granitic slopes that face south and southeast, capturing maximum sun while cool nights preserve freshness. The Chailles cuvée typically comes from vines rooted in these decomposed granite soils, which naturally limit yields and heighten concentration. Grapes are hand-harvested on these demanding, terraced vineyards, ensuring only perfectly ripe Syrah clusters make it to the cellar. Vinification traditionally emphasizes whole or partial bunch fermentation, long macerations, and gentle extraction to capture both the power and aromatic finesse of Syrah. Aging takes place in carefully selected barrels—often a mix of older oak—allowing the wine’s spicy, smoky, and mineral character to shine without being dominated by wood.
Food & Serving
This Cornas is a superb partner for hearty, savory dishes such as roasted lamb with herbs, slow-braised beef cheeks, game birds, duck breast, or venison with juniper and black olives. It also pairs beautifully with rich stews, cassoulet, and aged hard cheeses like Comté or mature cheddar. Serve at 16–18°C (around 60–64°F) to emphasize its aromatics and balance. In its youth, decanting for 1–2 hours is recommended to soften the tannins and allow the smoky, floral and mineral notes to fully open; as it matures, a shorter decant will generally be sufficient to remove sediment and awaken the bouquet.
