Agnes et Didier Dauvissat Crémant de Bourgogne Blanc de Blancs Brut is a refined, traditional-method sparkling wine from the heart of Burgundy. Tasting Notes
In the glass, this Crémant shows a pale straw-yellow colour with silvery highlights and a fine, persistent mousse. The bubbles are delicate and continuous, forming a refined perlage that hints at careful secondary fermentation and extended lees aging.
On the nose, expect bright aromas of green apple, lemon zest and white peach layered with notes of chalk, freshly baked brioche and a light floral lift of acacia and hawthorn. The palate is crisp and linear, driven by Chardonnay’s natural tension: citrus and orchard fruit at the core, underscored by a saline, mineral edge so typical of Burgundy. This Crémant is sourced from cool Burgundy vineyards where limestone-rich soils and a temperate climate deliver naturally high acidity—ideal for quality sparkling wine. Grapes are picked by hand to ensure pristine fruit, with early harvesting preserving freshness and aromatic delicacy. After gentle pressing, the base wines are vinified in temperature-controlled stainless-steel tanks to capture purity and precision, with malolactic fermentation carefully managed to balance creaminess and tension. The second fermentation takes place in bottle following the traditional method, and the wine rests sur lie for an extended period to develop fine bubbles and complex autolytic notes before disgorgement and a measured Brut dosage.

This is a versatile sparkling wine that shines both as an aperitif and at the table. Pair it with oysters, shrimp cocktail, sushi, ceviche or lightly grilled fish to echo its saline, citrus-driven profile. It also complements goat cheese, young Comté, fried appetizers and delicate poultry dishes with creamy sauces. Serve well-chilled at around 6–8°C (43–46°F).
