Tasting Notes
The wine pours a bright golden hue and shows an inviting, full-bodied character in the glass. Its aromatic profile is led by tropical fruit, with expressive notes of ripe apricot and peach complemented by hints of vanilla, sweet spice and freshly baked bread. On the palate, it is rich and rounded, with yellow-fruit flavours supported by a subtle, warming oak character. The finish is long, powerful and polished, making the wine enjoyable now while allowing it to develop further over the short term with careful cellaring.

Production
According to the producer, Adulation’s Chardonnay comes from mature vines rooted in calcareous clay and marl soils. The vineyard benefits from abundant sunshine moderated by refreshing breezes, encouraging a slow and balanced ripening process. At optimal maturity, the grapes are hand-harvested and carefully selected before pressing. The wine is then matured for several months in oak barrels, adding depth, texture and layers of vanilla and spice to the ripe Californian fruit.

Food & Serving
Serve lightly chilled at approximately 10–12°C to reveal the wine’s fruit, texture and oak complexity. It pairs particularly well with roast chicken, grilled or baked salmon, creamy seafood dishes, lobster, roasted vegetables and mildly spiced poultry. Decanting is not essential, but allowing the wine to breathe in the glass for 10–15 minutes can help its aromas and richness fully emerge.
