Tasting Notes
In the glass, the 2021 Spätburgunder seit 1882 shows a vibrant, translucent ruby with a youthful sheen, typical of finely crafted German Pinot Noir. At first opening the nose is still somewhat reserved, hinting at dark, cool-toned fruit and a subtle, earthy spice. With time in the glass or decanter, the wine opens beautifully to reveal a more lifted, charming side: wild berries, red and black cherries, and cranberries mingle with hints of rose petal, dried herbs, graphite and delicate smoky notes from the stems and élevage.
On the palate, this is precise and finely etched rather than opulent, with a taut backbone of acidity that carries the fruit in a long, focused line. The texture is silken yet structured, with ultra-fine tannins shaped by the 100% whole-cluster fermentation. Layers of red and dark berry fruit are interwoven with savoury, spicy undertones—think pepper, forest floor and a subtle, chalky mineral grip from the limestone soils. The magnum format and the 2021 vintage’s freshness together suggest excellent aging potential: while already compelling with air, it should gain complexity and harmony over 10–15 years and likely beyond.
Production
The seit 1882 cuvée is sourced from Simone Adams’s best Pinot Noir parcels around Ingelheim in Rheinhessen, all marked by limestone-rich soils that lend tension, finesse and a distinctive mineral edge to the wines. Only the highest quality barrels from several top sites are selected and blended to form this flagship Spätburgunder, ensuring both depth and balance. The grapes are harvested by hand at optimal ripeness, with meticulous sorting to guarantee pristine fruit. True to Simone Adams’s philosophy, the wine is fermented 100% with whole clusters, including stems, whenever the condition of the fruit allows, adding aromatic complexity, structure and spice. Gentle extraction and a careful élevage in small barrels (and/or larger wooden casks, depending on the final blend) help preserve purity, elegance and terroir expression in this estate-bottled wine.
Food & Serving
This refined Spätburgunder is a natural partner for elegant, nuanced dishes rather than heavy, robust fare. It pairs beautifully with roast duck, guinea fowl, veal tenderloin, game birds, or mushroom-based dishes such as wild mushroom risotto or truffle pasta. It also works well alongside soft-ripened cheeses like Brie or Camembert and mild, nutty hard cheeses. Serve at 14–16°C (57–61°F) to highlight its aromatic complexity and fine structure. Given its initial restraint, especially in magnum, decanting for 1–2 hours is strongly recommended in its youth to allow the wine to unfold its layered bouquet and silky texture.
