AdamsWein Spätburgunder »Auf dem Haun« 2022 is a finely etched, terroir-driven Pinot Noir from one of Rheinhessen’s most exciting addresses. Rather than chasing richness, Simone Adams focuses on nuance, precision and depth, allowing this high-lying limestone parcel to speak clearly in the glass. The result is a cool, restrained and classically burgundian style of German Spätburgunder that showcases origin over opulence.
Tasting Notes
In the glass, the 2022 »Auf dem Haun« shows a translucent ruby to garnet hue, with a vibrant, almost crystalline brightness that already hints at its finesse. On the nose, it opens with expressive cherry aromas – both ripe red and more sour-cherry inflections – supported by notes of redcurrant, cranberry, crushed raspberry and a subtle floral lift reminiscent of rose petals and violets. With air, darker nuances emerge: a touch of wild herbs, forest floor, finely ground spice and a gentle graphite-mineral edge.
On the palate, this Spätburgunder is cool, linear and wonderfully pure, with a taut, finely woven structure rather than any sense of heaviness. The fruit is precise and red-toned, carried by fresh, chalky acidity and ultra-fine tannins that give the wine grip without aggression. The whole-cluster fermentation adds a subtle herbal and spicy dimension, as well as a delicate stemmy freshness that lengthens the finish. Young, it already shows impressive balance, but the structure and mineral backbone suggest very good aging potential: it should evolve beautifully over 7–10 years, gaining additional complexity and silkiness with time in bottle.
Production
»Auf dem Haun« comes from a high, windswept section of slope above the historic Heerweg in Rheinhessen, where the subsoil is dominated by approximately 75% pure limestone rock – an exceptionally high proportion that strongly shapes the wine’s cool, stony character. The poor, calcareous soils naturally limit yields and encourage deep root systems, resulting in small, intensely flavored Pinot Noir berries. Harvest is carried out by hand, with strict selection in the vineyard to ensure only perfectly ripe, healthy fruit makes it to the cellar. Fermentation is done entirely with whole clusters – stems and all – to draw out additional structure, tension and aromatic complexity, while preserving freshness. The wine then matures in small oak barrels (barriques), with around 20% new oak, providing gentle oxygenation and subtle spice without dominating the delicate fruit. Minimal intervention and a focus on expressing site over cellar technique are central to the winemaking philosophy here.
Food & Serving
This finely structured Spätburgunder is an excellent partner for elegant, nuanced dishes rather than heavy, sauced cuisine. Think roasted poultry (duck, guinea fowl, free-range chicken), veal or pork tenderloin, grilled lamb chops, or game birds such as partridge. It also shines with mushroom-based dishes, truffled pasta, earthy root vegetables and mild to medium-hard cheeses. Serve at 14–16 °C to highlight its aromatic precision and vibrant acidity. A short decant of 30–60 minutes is recommended in its youth to allow the whole-cluster and mineral notes to open up, while older bottles can be served directly after gentle pouring, taking care to leave any sediment in the bottle.

In 2015, »Auf dem Haun« was the first wine with which she consciously moved away from generic quality designations, shifting instead to a clear hierarchy based on origin and terroir. Today, the estate follows the classic German system of Gutswein, Ortswein and Lagenwein, with »Auf dem Haun« representing a top single-vineyard expression from limestone-rich slopes.
