Tasting Notes
In the glass, this wine shows a deep, inky, almost opaque colour that hints at its intensity. The nose is layered and expressive, with concentrated dark fruit, lifted floral notes, subtle spice, and the kind of mineral edge that reflects the vineyard’s complex volcanic soils. On the palate, it is powerful yet polished, combining impressive depth with freshness and finesse. Expect richly textured black fruit, cassis, graphite, and savory complexity, supported by velvety tannins and a long, luxurious finish. This is a wine with substantial aging potential and should continue to evolve beautifully over many years.

Production
Thorevilos sits between St. Helena and Howell Mountain at around 250 meters above sea level, in a site that was once forest and is now defined by a highly distinctive mix of white, friable tuff and orange-brown gravel. The vineyard’s mosaic of volcanic and rocky soils, together with its isolated mountain setting, gives the wine its unmistakable identity. The grapes are harvested selectively, and the wine is vinified with a focus on preserving site character, concentration, and purity of fruit.

Food & Serving
This is a wine for richly flavored dishes such as grilled ribeye, braised short ribs, venison, or lamb with rosemary and herbs. It also pairs well with aged hard cheeses. Serve at 16–18°C, and decant several hours in advance to allow the wine to fully open and show its complexity.
