Abbazia di Novacella Sauvignon 2025 is a refined, still white wine that captures the crisp, aromatic character of Sauvignon Blanc from South Tyrol. From one of Italy’s most historic estates, it combines purity, freshness, and a distinctly alpine elegance that has long defined wines from this region.

Tasting Notes
In the glass, it shows a pale yellow color with bright green reflections. The nose is precise and varietally expressive, with notes of elderflower, blackcurrant, and a subtle herbal edge reminiscent of white pepper and fresh greenery. On the palate, it is lively, fragrant, and clean, with a vibrant line of acidity and a long, persistent finish. The style is focused and energetic, with enough balance and structure to suggest a drinking window of around three to five years.

Production
The grapes come from South Tyrol, including sunny slopes at the Marklhof estate in Cornaiano and vineyard sites in the valley floor area. Vines are trained using the Guyot method at around 420 meters above sea level, on south and southwest-facing exposures, where windy conditions and gravelly, sandy moraine soils help preserve freshness and aromatic intensity. After harvest, the grapes are fermented in stainless steel at controlled temperatures, followed by six months of aging in the same tanks. This approach keeps the wine’s aromas bright and intact while maintaining clarity, tension, and a dry, focused finish.

Food & Serving
This Sauvignon Blanc pairs beautifully with fresh goat cheese, asparagus, green salads, seafood, sushi, and light poultry dishes. Serve chilled at 8–10°C. Decanting is not necessary; simply open and enjoy while the wine is fresh and aromatic.
