Abbazia di Novacella Praepositus Sauvignon 2023 is an expressive white wine from Alto Adige’s cool, mountainous Valle Isarco. Made from Sauvignon Blanc grown at altitude, it combines vibrant freshness and aromatic intensity with the refined style associated with one of Italy’s oldest active wineries.

Tasting Notes
Bright straw-yellow in appearance, the wine opens with an elegant, distinctly aromatic nose of elderflower, grapefruit, gooseberry and fresh herbs, complemented by a subtle mineral character. On the palate, crisp acidity gives definition to flavours of citrus, green apple and ripe orchard fruit, while a clean, gently saline finish adds length and freshness. The 2023 is best enjoyed in its youth, when its vibrant fruit and aromatic precision are at their most expressive. With careful cellaring, it may develop additional complexity over the next few years while retaining its characteristic freshness.

Production
The vineyards of the Valle Isarco benefit from high elevations, cool Alpine nights and sunny days, conditions that help Sauvignon Blanc retain its natural acidity while developing pronounced aromas. Grapes are carefully harvested at maturity and vinified with a focus on preserving their purity and freshness, resulting in a lively, finely structured white with a clear sense of its mountainous origin.

Food & Serving
Serve well chilled at approximately 8–10°C. It is an excellent match for asparagus, goat’s cheese, seafood, sushi, grilled fish and fresh herb-based dishes, as well as lighter poultry preparations. Decanting is not necessary; serving the wine in a generously shaped white-wine glass will help reveal its aromatic profile.
