Domaine Nicolas Millet’s Sancerre Domaine des Côtes Blanches 2025 is a fresh, precise Loire Valley white shaped by the celebrated chalk-rich soils of Sancerre. Made with a slow pneumatic pressing and gentle cellar handling, it combines the appellation’s classic Sauvignon Blanc character with a rounded texture from five months of lees ageing. Sancerre has been one of France’s most renowned white-wine regions for generations, prized for its mineral-driven wines and elegant expression of terroir.

Tasting Notes
Bright and youthful in appearance, this Sancerre is expected to show a clear, pale-golden colour. The nose should reveal lifted citrus and white-fruit aromas, complemented by fresh herbal notes and the flinty, chalky nuances associated with the Côtes Blanches terroir. On the palate, it is likely to be crisp and energetic, with flavours of lemon, green apple and ripe pear balanced by refreshing acidity. Ageing on the lees in stainless-steel tanks for five months adds subtle breadth and a smoother texture while preserving the wine’s freshness. It can be enjoyed now for its youthful vibrancy, while careful cellaring for two to four years may allow additional mineral and savoury complexity to develop.

Production
The wine comes from the Côtes Blanches area of Sancerre, known for its pale limestone and chalk soils, which are particularly well suited to producing vibrant, mineral-focused whites. The grapes undergo a slow pneumatic pressing to extract the juice gently, with no sulphur added during vinification. Fermentation and maturation take place in stainless-steel tanks, where the wine remains on its lees for five months. It is lightly filtered before bottling, with gravity used during the bottling process to preserve the wine’s delicacy and freshness.

Food & Serving
Serve chilled at approximately 8–10°C. This Sancerre is a natural partner for oysters, mussels, prawns, grilled fish and seafood salads, as well as goat’s cheese—especially the Loire Valley classic Crottin de Chavignol. It also works well with asparagus, fresh herbs and light poultry dishes. Decanting is not necessary; opening the bottle shortly before serving is sufficient, although a brief period in the glass can help its aromas unfold.
