Domaine Nicolas Millet’s Sancerre Domaine des Côtes Blanches 2023 is a naturally made red wine from the renowned Sancerre appellation. Crafted with spontaneous fermentation, partial whole-cluster vinification and no added sulphur during winemaking, it offers an authentic expression with both freshness and depth.
Tasting Notes
The wine is expected to show a bright ruby colour, with possible natural haze or sediment due to its minimal intervention approach. On the nose, look for fresh red fruit, subtle floral notes and delicate savoury nuances, complemented by gentle oak-derived complexity.
The palate combines vibrant fruit with a supple, textured character and a balanced finish. Twelve months of maturation in oak barrels and stainless-steel tanks add structure without overshadowing the wine’s natural freshness. It is approachable now, while its balance and concentration should allow it to develop additional savoury complexity over the next few years.
Production
The wine is naturally produced through spontaneous alcoholic fermentation, with a portion of the grapes fermented as whole clusters. No sulphur is added during vinification. It then matures for twelve months in a combination of oak barrels and stainless-steel tanks, bringing together texture, complexity and freshness. Before bottling, it receives only light filtration and is bottled by gravity to preserve its purity and character. Natural sediment may be present and is a sign of minimal intervention rather than a fault.
Food & Serving
Serve slightly cool, at approximately 14–16°C. Its freshness and textured palate make it a versatile partner for roast poultry, duck, pork, charcuterie, mushroom dishes and lightly spiced vegetable preparations. Because the wine may contain natural sediment, stand the bottle upright before serving and pour carefully; a brief, gentle decant can help separate the sediment and open the wine, although vigorous aeration is not necessary.
