Sourced from vineyards in Spain’s coastal Rías Baixas region, the 2024 EIVI Limited Release benefits from a cool Atlantic climate, abundant ocean breezes and mineral-rich soils that naturally favor fresh, aromatic white wines. Grapes are typically harvested in the cool hours to preserve acidity and delicate aromatics, then carefully sorted to ensure only the healthiest fruit makes it into the final cuvée. Fermentation is carried out in temperature-controlled stainless steel tanks to safeguard purity of fruit and emphasize the region’s hallmark minerality, with a short period on fine lees to add subtle texture and length without masking the wine’s bright, coastal character.
