Production
As Sortes comes from selected high-altitude parcels in Valdeorras, where old Godello vines are rooted in granite-rich soils and shaped by a cool Atlantic climate with pronounced day-night variation. The grapes are harvested by hand with careful selection, then fermented with native yeasts and matured in large French oak casks, followed by extended lees contact to build structure, texture, and aromatic depth.

This wine pairs beautifully with seafood, grilled fish, shellfish, and poultry, and it also works well with richer dishes such as butter- or cream-based preparations. Serve it at 10–12°C; decanting is not essential, but a short aeration can help the wine show its full aromatic range.
