Tasting Notes
In the glass, this Ladoix Blanc typically shows a pale straw to light lemon color with bright, youthful reflections. The nose is pure and expressive, with aromas of white flowers, citrus zest, green apple and pear, supported by nuances of crushed limestone, subtle hazelnut and a gentle hint of brioche as it opens.
On the palate, expect a lively, well-focused profile: crisp citrus and orchard fruits framed by a fine, linear acidity and a distinct saline, chalky minerality from the marl-rich soils. The texture is medium-bodied yet tense, with just enough creaminess from élevage to round the edges without sacrificing freshness. The finish is long and mouthwatering, marked by lemon peel, white peach and a lingering stony note. Production
Les Marnes Blanches takes its name from the light-colored marl and limestone soils that define this slope at the foot of the Corton hill, giving the wine its characteristic tension and mineral drive. The Chardonnay grapes are typically harvested by hand at optimal ripeness to preserve acidity and aromatic purity. In the cellar, Faiveley favors a careful, protective pressing and a cool fermentation in a mix of stainless steel and French oak, with a judicious use of barrel (often including a modest proportion of new oak) to add texture and complexity without overwhelming the terroir. The wine then rests on fine lees, which contribute finesse and subtle creaminess before bottling.
Food & Serving
This Ladoix Blanc is a versatile partner at the table, shining with simply prepared seafood such as oysters, scallops, grilled prawns and shellfish, as well as poached white fish, roast chicken, veal in light cream sauces and dishes featuring morel mushrooms or mild cheeses like Comté and young goat’s cheese. Serve chilled but not too cold, ideally around 10–12°C (50–54°F), to allow the aromatics and texture to fully express themselves. A brief 20–30 minutes in a carafe, especially in its first few years, can help the wine open up and reveal its floral and mineral complexity.
