The 2023 Bodegas Catena Zapata White Bones Chardonnay is one of Argentina’s most coveted white wines, sourced from the iconic Adrianna Vineyard high in the Andes. This is not your typical New World Chardonnay: it’s a finely etched, mineral-driven wine that showcases altitude, limestone soils and meticulous craftsmanship. Produced in very small quantities, White Bones has become a modern benchmark for South American Chardonnay and a reference point for cool-climate styles worldwide.

Tasting Notes
In the glass, the 2023 White Bones Chardonnay typically shows a pale straw to light gold hue, with a brightness that hints at its tension and freshness. The nose is detailed and complex: expect lifted aromas of citrus blossom, Meyer lemon, white peach and green apple layered with chalky minerality, subtle smoke, acacia, and delicate hints of herbs and wildflowers that nod to the native flora of the vineyard. On the palate, this Chardonnay is precise and energetic rather than opulent. A core of citrus and stone fruit is framed by racy acidity and a distinctly saline, chalk-dust character—very much a wine that speaks of limestone soils. Nuances of almond, brioche and lightly toasted oak are present but beautifully integrated, supporting rather than dominating the fruit. The finish is long, linear and quietly powerful, with lingering mineral and citrus notes. While appealing in its youth for its tension and purity, the structure and acidity suggest strong aging potential; under proper cellaring, it should evolve gracefully for 8–12 years, developing more honeyed, nutty and tertiary complexity over time.

Production
White Bones comes from select rows within Catena Zapata’s famed Adrianna Vineyard in Gualtallary, Mendoza, a site often described as one of the “Grand Crus” of the Andes. Planted at very high altitude, the vineyard benefits from intense sunlight, cool mountain nights and extraordinarily poor, calcareous soils laced with limestone and marine fossils—the “bones” that inspire the wine’s name. These extreme conditions naturally limit yields and concentrate flavor, while preserving remarkable acidity. Grapes are typically hand-harvested in small boxes to protect the fruit, with rigorous selection in the vineyard and cellar. Fermentation is traditionally carried out with indigenous yeasts, often in French oak barrels, followed by a period of aging on the lees to build texture and complexity. New oak is used judiciously, with the focus firmly on expressing terroir, minerality and finesse rather than overt wood character.

Food & Serving
This is a gastronomic Chardonnay built for the table. Its vibrancy and structure make it a superb match for refined seafood dishes such as scallops, lobster, grilled white fish, oysters, and ceviche, as well as sushi and sashimi where its minerality really shines. It also pairs beautifully with roast chicken, veal or pork in light cream or lemon-based sauces, and with truffled dishes or mushroom risottos that echo its earthy, savory nuances. Fine cheeses—especially aged Comté, Gruyère or Manchego—are excellent partners. Serve at around 10–12°C (50–54°F) to balance freshness and aromatic complexity. Decanting for 30–45 minutes can help the wine open up, especially in its first few years, revealing more layers of texture and minerality.
