O Soro is one of the most coveted white wines from Valdeorras, produced from a tiny single vineyard of more than 100-year-old, ungrafted vines. The 2022 vintage combines remarkable concentration with precision, showing why Rafael Palacios has become a reference point for serious Godello.

Tasting Notes
In the glass, it shows a luminous, refined profile, with aromas of yellow stone fruit, orange peel, citrus, and delicate floral notes. Subtle spice and a distinct mineral edge add further complexity and lift. On the palate, O Soro is intensely concentrated yet beautifully poised, with a firm, textural grip and a saline, stony freshness that keeps everything focused. The finish is long, layered, and highly expressive. It has the structure and depth to age gracefully for many years, gaining even more nuance and complexity over time.

Production
O Soro comes from a little more than one hectare in Valdeorras, planted with old, ungrafted vines rooted in a single parcel with a west-northwest exposure. The site is slightly warmer than As Sortes, giving the wine extra body and aromatic depth. Farming is biodynamic, the grapes are spontaneously fermented, and the wine is aged in amphorae, concrete, and tonneaux to build structure, purity, and mineral precision. Production is extremely limited at around 3,000 bottles.

Food & Serving
This is an excellent match for fine fish, shellfish, lobster, poultry, or refined modern cuisine, and it is also impressive served on its own. Serve chilled at 10–12 °C. Decanting is not essential, but a short aeration can help the wine open up in its youth.
