On the palate, it is taut and vibrant, with citrus-driven energy, vivid acidity, and a clear saline line that gives the wine real tension. A fine grip of tannin and a long, savory finish add depth and complexity, while the combination of fruit, structure, and minerality suggests good aging potential over the next several years.

Production
The Edilia Riesling comes from the steep, highly regarded Mittelheimer St. Nikolaus vineyard in the Rheingau, where calcareous loess and alluvial soils near the Rhine give the wine its signature saline minerality and defined structure. The grapes are partially destemmed and given a short maceration before being gently pressed in a basket press. Fermentation takes place spontaneously without temperature control, followed by 12 months on the full lees in a 300-liter wooden cask, with the wine bottled unfiltered and without fining in a low-intervention style.

Food & Serving
This Riesling is a versatile partner at the table, pairing especially well with sushi, sashimi, grilled zander with lemon butter, and herb-roasted poultry. It also works beautifully with goat cheese or vegetarian dishes featuring fennel and citrus. Serve chilled at around 8–10°C, and decanting is generally not necessary, though a short aeration can help if you want to open up its more subtle mineral and spicy layers.
