The Black Lion is sourced from meticulously selected Shiraz parcels in prime coastal and inland sites, with Stellenbosch at its core, often complemented by fruit from cooler, high‑quality terroirs in the Cape. These vineyards are typically planted on well‑drained granitic and shale‑derived soils, which naturally limit yields and concentrate flavor, while maritime influences and carefully managed canopy help retain freshness in the grapes. Harvesting is done by hand, usually in multiple passes, to ensure only perfectly ripe, healthy bunches make it to the cellar. In the winery, the fruit is sorted berry by berry before gentle crushing. Fermentation takes place in small vessels, often with temperature control and careful, manual extraction to build structure without harshness. The wine is then matured in a high proportion of new, fine‑grained French oak barrels for an extended period, allowing tannins to integrate and aromas to deepen, before a final, rigorous selection for the blend and bottling in extremely limited quantities.
