Description
The 2021 Labeja Riesling trocken from Saltaren Wines is a focused, terroir-driven Rheingau Riesling that combines cool precision with a distinctly saline mineral edge. Sourced from the Mittelheimer St. Nikolaus site and made in a low-intervention style, it reflects both the character of the vineyard and the producer’s biodiverse, nature-minded approach.
Tasting Notes
Pale straw in the glass, it opens with aromas of herb spice, yellow stone fruit, and lemon zest. On the palate, it is bright, taut, and linear, with vivid acidity, cool fruit expression, and a finely etched mineral core.
The finish is long and saline, with a delicate touch of texture and subtle phenolic grip adding depth. The 2021 vintage’s freshness and structure give it strong cellaring potential, with the wine likely to gain additional complexity over the next several years.
Production
The Labeja Riesling comes from the Mittelheimer St. Nikolaus vineyard in the Rheingau, where limestone-rich loess and loam soils contribute to its salty tension, cool structure, and clear mineral profile. The grapes are partly destemmed and given a short skin contact before being gently pressed, then spontaneously fermented and matured for 10–12 months on fine lees in stainless steel and 220-liter wooden barrels. It is bottled unfiltered in a low-intervention style.
Food & Serving
This is a highly versatile food wine, excellent with sushi and sashimi, grilled zander with lemon butter, or herb-forward poultry dishes. It also works beautifully with goat cheese and vegetarian plates featuring fennel or citrus. Serve chilled at around 8–10°C, and decanting is generally not necessary, though a short aeration can help it open up in its youth.

Saltaren Wines is the project of Alex Saltaren Castro, whose work is defined by a natural, biodiversity-conscious philosophy in the vineyard and cellar. The name Labeja, meaning “bee” in Spanish, symbolizes this commitment to a living, balanced ecosystem. With its precise, minimal-intervention wines, the estate is contributing to the modern expression of the Rheingau while honoring the region’s tradition of site-specific Riesling.
