Tasting Notes
In the glass, it shows a cool, restrained style with a pale, luminous color typical of youthful dry Riesling. The nose is elegant and understated, opening with yellow orchard fruit, apple compote, lemon zest, and subtle herbal notes. On the palate, the wine is taut, focused, and finely structured, with bright citrus fruit, lively acidity, and a firm mineral edge. The finish is long, salty, and precise, with enough depth and concentration to reward cellaring. Thanks to its structure and balance, this Riesling has strong aging potential and should develop additional complexity over the next several years.

Production
The grapes come from Mittelheimer St. Nikolaus, one of the Rheingau’s top vineyard sites, where calcareous loess and alluvial soils near the Rhine provide both finesse and a distinctive saline mineral imprint. The vineyard is farmed with a nature-minded, biodiverse approach, reflecting a strong respect for the site and its natural balance. In the cellar, the fruit is partially de-stemmed and given a short maceration before gentle pressing in a basket press. Fermentation is spontaneous and untemperature-controlled, followed by 12 months of lees aging in 300-liter wooden barrels. The wine is bottled unfiltered and without fining, in a very low-intervention style that preserves texture, energy, and authenticity.

Food & Serving
This is an excellent food wine, especially with sushi, sashimi, grilled zander with lemon butter, or poultry dishes with herbs. It also pairs beautifully with goat cheese and vegetable-driven dishes featuring fennel or citrus. Serve chilled at around 8–10°C, and decanting is generally not necessary, though a short aeration can help it open up if served young.
