Sourced from Zenato’s estate vineyards in the historic Valpolicella Classico zone, the 2020 Amarone benefits from a hillside terroir of calcareous and clay-rich soils that naturally limit yields and concentrate flavor. The blend is anchored by Corvina, supported by Rondinella and other traditional local varieties, which are hand-harvested at optimal ripeness. The grapes are then laid out in well-ventilated drying lofts for several months, following the classic appassimento technique that slowly dehydrates the berries, intensifying sugars, aromatics, and tannins. After gentle pressing and a long, temperature-controlled fermentation, the wine is aged in a combination of large oak casks and smaller barrels to integrate tannins and add complexity, before further refinement in bottle prior to release.
