The 2020 Cuvée Thermidor Brut Nature from Johannisberger Sekthaus is a refined Rheingau sparkling wine made in a precise, uncompromising style. With its long lees aging, spontaneous fermentation, and zero dosage, it offers exceptional clarity, minerality, and elegance—showing why the Rheingau has long been one of Germany’s most respected regions for structured sparkling wines.

Tasting Notes
In the glass, it shows a bright, pale straw color with a lively, fine mousse. The nose is expressive yet restrained, with aromas of citrus, green apple, brioche, yeast, and a subtle nutty-mineral edge. On the palate, it is taut, dry, and sharply focused, carried by vivid acidity and delicate perlage. Notes of lemon zest, crisp orchard fruit, and savory salinity unfold into a long, elegant finish. With its structure and freshness, it has excellent aging potential and should gain additional complexity over time.

Production
The grapes come from cool, mineral-driven sites in the Rheingau, giving the wine its freshness, precision, and distinct sense of place. The base wines were hand-harvested and spontaneously fermented, then underwent a traditional second fermentation in bottle. After extended lees aging, the wine was disgorged without dosage, resulting in a particularly pure and linear Brut Nature style.

Food & Serving
Excellent with oysters, shellfish, refined starters, sushi, and delicate fish dishes. Serve well chilled at around 8–10°C. Decanting is not recommended; instead, open shortly before serving to preserve its freshness and fine mousse.
