Description
The 2019 Steinberger “Wild Ferment” Riesling trocken from Kloster Eberbach is a striking expression of one of Germany’s most legendary sites. Made only from the oldest vines in the historic Steinberg and fermented with native yeasts in a deliberately hands-off style, it combines heritage, precision and a distinctly adventurous character. Bottled exclusively in magnum, it is a wine with both collector appeal and serious ageing potential.
Tasting Notes
Pale gold in the glass, it opens with a layered, slightly wild nose of citrus zest, ripe stone fruit, fresh herbs and subtle yeast spice. There is a beautiful tension on the palate: taut acidity, crystalline focus and a pronounced mineral core give the wine drive and length, while a salty, savory edge adds complexity.
Compared with the 2018 vintage, the 2019 feels cooler and more linear, with a firmer structure and even greater precision. The finish is long, elegant and built for development, making this a Riesling that should reward cellaring over many years.
Production
Sourced from the Steinberg, a historic clos enclosed by a stone wall and cultivated since the 12th century by the Cistercian monks of Kloster Eberbach, the wine reflects a truly singular terroir. South-west facing slopes with sand, gravel, loam and slate produce Rieslings of depth and mineral intensity, and only the oldest vines are selected for this cuvée. Fermentation occurs spontaneously with indigenous yeasts from the vineyard, with part of the process beginning directly in the vineyard in glass demijohns, followed by maceration, barrel aging and maturation on fine lees before blending and bottling in magnum.
Food & Serving
Excellent with scallops, fine white fish, or poultry in creamy sauces, as well as delicately spiced Asian dishes. Serve chilled at around 10–12°C to bring out its aromatics and tension. Decanting is not essential, but a short aeration can help the wine unfold if opened young.
