Description
The 2018 Steinberger “Wild Ferment” Riesling trocken from Kloster Eberbach is a distinctive, uncompromising expression of one of Germany’s most legendary vineyards. Made only from selected old vines and bottled exclusively in magnum, it combines centuries-old Rheingau tradition with a bold natural-fermentation approach that sets it apart.
Tasting Notes
In the glass, this Riesling shows a precise, youthful character with a concentrated structure that promises further evolution. The nose can be initially quirky and tightly wound, then opens beautifully with air to reveal white stone fruit, dried herbs, and candied citrus.
On the palate, it is dense, taut, and very much in motion, driven by bright acidity and a clear saline-mineral edge. There is impressive depth here, but also a sense that the wine is still unfolding, making it especially rewarding for those who appreciate serious, age-worthy Riesling. Aging potential is excellent, and the magnum format should only enhance its long-term development.
Production
The Steinberg is a historic closed vineyard site in the Rheingau, enclosed by a stone wall and cultivated since the 12th century by Cistercian monks. Its southwest-facing slopes with sand, gravel, clay, and slate create the conditions for Rieslings of notable mineral intensity and depth, and this wine is drawn from the oldest vines in the parcel.
Vinification follows a natural, experimental path: spontaneous fermentation with wild yeasts, including a portion that begins directly in the vineyard in glass balloons, alongside skin contact and barrel aging in barrique. The fermentation components are later blended and the wine is matured on its fine lees before being released exclusively in magnum.
Food & Serving
This is an excellent match for scallops, fine fish dishes, or poultry served with creamy sauces, where the wine’s acidity and mineral drive can shine. It also works well with delicately spiced Asian cuisine, and can be enjoyed on its own as a contemplative wine. Serve chilled, ideally around 10–12°C, and consider brief decanting if you want to help the aromatics open up.
