Description
From the steep, mineral-driven slopes of Lorch Kapellenberg in the Rheingau, this 2017 Spätburgunder trocken from Chat Sauvage captures a distinctly burgundian style with German precision. It stands out for its elegant fruit profile, savory mineral depth, and finely tuned structure, reflecting one of the Rheingau’s most compelling Pinot Noir terroirs.
Tasting Notes
In the glass, it shows a refined, ruby-toned color with a translucent, graceful appearance rather than power or density. The nose opens with red cherry and raspberry, layered with delicate herbal spice, smoky nuances, and a cool mineral character that adds tension and lift.
On the palate, the wine is precise and filigreed, with fine-grained tannins, vibrant acidity, and a clear, linear flow. The slate, quartzite, and loess-clay soils lend both structure and an unmistakable mineral backbone, carrying the wine to a long, focused finish. While already expressive, it should continue to evolve beautifully over the next several years, gaining complexity and nuance.
Production
The fruit comes from the Lorch Kapellenberg vineyard in the Rheingau, where slate, quartzite, and loess-clay soils provide the kind of terroir that gives Pinot Noir depth, freshness, and a strong mineral signature. The grapes were harvested by hand with strict selection, then spontaneously fermented to preserve site expression and authenticity. The wine was matured for around 24 months in French barriques and bottled with minimal filtration to retain texture and character.
Food & Serving
This is an excellent partner for poultry, veal, venison, and mushroom-based dishes, especially those with truffle or earthy components. It also works beautifully with mature cheese. Serve at around 16–18°C, and decanting is recommended for a short period if opening the wine young, to allow the aromatics and structure to fully unfold.
