Tasting Notes
In the glass, this Champagne shows a pale, luminous straw color with fine, persistent bubbles forming an elegant, lively mousse. The nose is precise and inviting, with notes of crisp green apple, lemon zest and white flowers layered over hints of brioche, chalky minerality and a touch of fresh almond. On the palate, Blanc d’Assemblage Brut Nature is bone-dry yet far from austere, balancing brisk acidity with a supple, creamy texture from extended lees aging. Production
Sourced from carefully tended vineyards in the heart of the Champagne region, this cuvée draws on the classic trio of Chardonnay for tension and elegance, Pinot Meunier for aromatics and fruit, and Pinot Noir for structure and depth. The grapes are harvested by hand to ensure optimal selection of bunches in the vineyard, then gently pressed to preserve purity. Fermentation typically takes place in temperature-controlled vessels to retain freshness, followed by extended aging on the lees to build texture and complexity. As a Brut Nature, no dosage is added at disgorgement, so the final wine is a transparent reflection of its terroir, base wines and élevage.

This is a highly versatile Champagne at the table, pairing beautifully with oysters, scallop ceviche, sushi and sashimi, as well as delicate white fish, goat’s cheese salads and light poultry dishes.
