Production

The grapes are harvested by hand to ensure optimal selection of bunches in the vineyard, then gently pressed to preserve purity. Fermentation typically takes place in temperature-controlled vessels to retain freshness, followed by extended aging on the lees to build texture and complexity. As a Brut Nature, no dosage is added at disgorgement, so the final wine is a transparent reflection of its terroir, base wines and élevage.
