Tasting Notes
In the glass, the 2018 Cuvée XR shows a deep, opaque ruby to garnet core with a youthful, almost inky intensity at the rim. The nose is complex and layered, opening with blackcurrant, dark cherry, and ripe plum, followed by notes of cedar, tobacco leaf, graphite, and subtle roasted coffee. With air, more nuanced aromas emerge: dried herbs, pencil shavings, sweet spices, and a hint of dark chocolate. On the palate, the wine is full-bodied and structured yet remarkably polished. Dense black fruit—cassis, blackberry, and black cherry—is framed by fine-grained tannins and a vibrant, well-integrated acidity that keeps the wine fresh despite its power. Oak is present but refined, adding tones of vanilla pod, toasted spice, and a gentle smokiness without overshadowing the fruit. The finish is long and persistent, with lingering notes of blackcurrant, cocoa, and savory herbs. Built for longevity, the 2018 has the concentration and structure to evolve beautifully over 10–15 years or more, developing greater complexity and tertiary nuances with time in the bottle.
Production
The grapes for Cuvée XR come from carefully selected, low-yielding vineyards in the Pfalz, an unusually warm and dry pocket of Germany that suits late-ripening Bordeaux varieties exceptionally well. The region’s mix of loess, limestone, and gravelly soils provides both good drainage and mineral tension, contributing to the wine’s depth and precision. Harvest is typically carried out by hand, allowing the Knipser team to select only perfectly ripe, healthy bunches, often in multiple passes through the vineyard. In the cellar, the varieties are vinified separately, with temperature-controlled fermentation and extended maceration to extract color, tannin, and aroma delicately yet thoroughly. The wine is then aged in small oak barrels (barriques), a significant proportion of which are new, to build structure and complexity. After careful blending and further maturation, Cuvée XR is bottled with the intention of long-term aging and gradual refinement in the cellar.
Food & Serving
This powerful yet finely balanced red is a natural match for rich, savory dishes. Think dry-aged ribeye steak, roast lamb with rosemary, venison with dark berry jus, or braised short ribs. It also pairs beautifully with truffle-infused dishes, mushroom ragout, and aged hard cheeses such as Comté or mature Gouda. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and supple texture. Decanting for 1–2 hours is recommended in its youth to allow the wine to open fully and soften the tannins; older bottles will benefit from a gentle, shorter decant mainly to remove sediment.
