Tasting Notes
In the glass, the Lay Purus 2023 shows a pale lemon to light straw color with a delicate greenish tinge, hinting at its youth and freshness. Production
The grapes for Lay Purus come from approximately 40‑year‑old Riesling vines rooted in a historic Mosel site with grey and blue slate soils and a favorable south‑facing exposition. The vines are densely planted, encouraging deep root systems that tap into mineral layers and moderate yields naturally. Farming is certified organic, and in line with the Trossen philosophy, the fruit is hand‑harvested at optimal ripeness. Fermentation proceeds spontaneously with native yeasts and moves slowly, allowing the wine to develop aromatic complexity. The wine spends extended time on its fine lees and is produced as a natural wine, with no significant technical intervention or sulfur addition. Clarification occurs gently through natural sedimentation and careful racking between large wooden cask and stainless steel tank, preserving texture and purity without aggressive filtration.
