Blending Chardonnay and Pinot Nero, it offers a mineral-driven, terroir-focused expression that stands apart from more opulent styles in the region. Non-vintage by design, it reflects Gatta’s philosophy of blending multiple harvests to achieve balance, complexity, and consistency.
Tasting Notes
In the glass, this Cuvée Nature shows a luminous straw-yellow color with subtle golden highlights and a fine, persistent mousse. The bubbles are delicate yet energetic, forming a refined bead that hints at prolonged aging on the lees. On the nose, expect a vibrant and precise bouquet: green and yellow apple, lemon zest, and crisp pear layered with white flowers, fresh bread crust, and a saline, chalky minerality. Hints of hazelnut, brioche, and subtle herbal tones emerge with air. The palate is taut, dry, and linear, with a spine of bright acidity and a firm mineral core. Citrus, apple, and stone-fruit notes are wrapped in a creamy, lees-derived texture, giving both tension and finesse. The finish is long, saline, and impeccably clean, with no sweetness to distract from the purity of the fruit and terroir. With its structure and freshness, this non-vintage cuvée can be enjoyed now for its energy but also has the potential to evolve beautifully over the next 3–5 years, gaining complexity and softness while retaining its vibrant backbone.
Production
Nicola Gatta works in the calcareous hills on the eastern edge of Franciacorta, in the Gussago area of Lombardy, where high altitudes, steep slopes, and limestone-rich soils give naturally high acidity and pronounced mineral character. The grapes—Chardonnay and Pinot Nero—are typically hand-harvested in small crates to preserve freshness and integrity, often from low-yielding vines farmed with a strong focus on environmental respect. In the cellar, fermentations are carried out with a minimal-intervention mindset, and the base wines undergo secondary fermentation in bottle using the traditional method. Extended aging on the lees adds depth and texture, while the “Nature” style means no dosage is added at disgorgement, leaving the wine bone-dry and a transparent reflection of site, grape, and vintage blend.
Food & Serving
Nicola Gatta Cuvée Nature is a versatile sparkling wine that shines alongside delicate yet flavorful dishes. It pairs beautifully with oysters, crudo, and simply prepared shellfish, as well as carpaccio, tartare, and sushi where its acidity cleanses the palate. It also complements fresh goat cheese, young cow’s milk cheeses, tempura, vegetable fritters, and light poultry or veal dishes with citrus or herb-based sauces. Serve well-chilled at about 8–10°C (46–50°F). A brief 10–15 minutes in the glass or, for more complexity, a gentle decant into a chilled carafe can help the wine open up, releasing its more nuanced brioche, nut, and mineral notes.
Producer
Nicola Gatta is an artisan grower and producer based in Gussago, in the Lombardy region of northern Italy, just outside the traditional heart of Franciacorta. Working at higher elevations on limestone-rich slopes, Gatta has become known for his precise, terroir-driven sparkling wines that often spend extended time on the lees and are bottled with little or no dosage. His approach emphasizes organic or low-intervention viticulture, careful manual work in the vineyard, and patient élevage in the cellar. In a region dominated by larger houses, Nicola Gatta stands out as a small, quality-focused producer who has earned a strong following among sommeliers and wine enthusiasts seeking characterful, site-expressive traditional-method sparkling wines from Italy.
