Production
Dom Pérignon 2015 is sourced from some of Champagne’s finest grand cru and premier cru vineyards, primarily on the chalk-rich slopes of the Montagne de Reims, the Côte des Blancs and the Marne Valley. The region’s cool continental climate and deep chalk subsoils lend the wine its hallmark tension, salinity and finesse. Grapes are harvested by hand at optimal ripeness to ensure careful selection and integrity of the fruit. The blend is composed of 51% Pinot Noir and 49% Chardonnay, vinified separately before the final assemblage, with a strong focus on expressing the character of the vintage rather than individual parcels. After the first fermentation in stainless steel, the wine undergoes prolonged aging on its lees in bottle, during which it develops its fine mousse, complexity and subtle autolytic notes of bread and toast.
