Production

Harvesting is done by hand to ensure that only perfectly healthy clusters make it to the press. The wines are vinified plot by plot, with careful temperature control to preserve aromatics and freshness, and then blended around the 2020 base year with a judicious portion of reserve wines to maintain the house style. Extended aging on the lees in bottle enhances texture and complexity, and a carefully balanced dosage keeps the Champagne dry, precise, and food-friendly.
