Production
Wiltinger Braune Kupp is a steep, south-facing slate vineyard in the Saar, a cooler sub-region of the Mosel famed for its tension-filled Rieslings. The vines draw their character from weathered slate soils that store heat by day and radiate it at night, helping the grapes ripen slowly while preserving intense acidity and aromatic lift. Harvest is carried out by hand, typically in multiple passes (selective picking), to ensure that only perfectly ripe, healthy grapes are chosen for the Kabinett level. In the cellar, the must is gently pressed and fermented with natural or carefully selected yeasts at cool temperatures, often in traditional large neutral oak fuders or stainless steel, to retain purity of fruit and emphasize terroir. Fermentation is stopped at the ideal balance of sweetness and acidity, resulting in a finely tuned off-dry style that is the hallmark of classic Mosel and Saar Kabinett.

This Kabinett is a superbly versatile food wine, pairing beautifully with delicately spiced Asian cuisine (think sashimi, sushi, Thai salads, lightly spiced curries), freshwater fish, ceviche, and shellfish such as prawns, scallops and crab. It also shines with white meat dishes like roast chicken, veal with light cream sauces, and vegetable-focused plates featuring asparagus, fennel or citrus.
