Diebolt-Vallois Champagne Blanc de Blancs Fleur de Passion Extra Brut 2014 is a pure, terroir-driven expression of Chardonnay from some of the finest chalk soils in Champagne. Produced only in top vintages and in very limited quantities, it is the flagship cuvée of this revered Côte des Blancs grower. Crafted from old vines in Grand Cru vineyards and aged extensively before release, it captures both the finesse and depth that make great Blanc de Blancs so compelling.

Tasting Notes
In the glass, the 2014 Fleur de Passion shows a luminous pale gold color with a fine, persistent bead and an elegant, creamy mousse. The nose is refined and complex, opening with fresh lemon zest, white flowers and chalky minerality, followed by notes of green apple, pear, toasted brioche, almond and a subtle hint of vanilla and dried herbs from its long élevage. On the palate, this Extra Brut is racy yet layered, with a precise, vibrant acidity that frames its concentrated Chardonnay fruit. Flavors of citrus, crisp orchard fruits and white peach are interwoven with nuances of hazelnut, pastry cream, wet stones and a touch of salinity. The texture is silky and polished, leading to a long, mouthwatering finish that leaves a lingering impression of chalk and citrus peel. Already beautifully expressive, the 2014 has the structure and tension to evolve gracefully for 8–15 years from vintage, gaining even more complexity with further bottle age.

Production
Sourced primarily from old-vine Chardonnay planted on pure chalk soils in the Grand Cru village of Cramant, Fleur de Passion is a meticulous expression of Côte des Blancs terroir. The grapes are hand-harvested at optimal ripeness and carefully sorted to protect fruit purity. Fermentation typically takes place in seasoned oak barrels or foudres, with no malolactic fermentation, helping to preserve freshness, tension and a chiselled mineral profile. The base wines are then aged on the lees before blending and bottling for an extended second maturation in the cellars, often for many years, before disgorgement with a very low Extra Brut dosage to let the terroir speak clearly.

Food & Serving
This refined Blanc de Blancs is a superb match for delicate, high-quality seafood such as oysters, scallops, langoustines, sashimi and caviar, as well as refined dishes like turbot with beurre blanc, lobster, or poultry in a light cream or truffle sauce. It also pairs beautifully with aged hard cheeses and subtly flavored goat cheeses. Serve well-chilled but not icy, ideally at 8–10°C (46–50°F), to allow the aromatics to fully unfold. A light decant or simply pouring into larger, tulip-shaped wine glasses 10–15 minutes before serving can help open its bouquet and show its full complexity.
