Tasting Notes
In the glass, the wine shows a pale lemon color with green highlights, signaling freshness and youth. The nose opens with precise aromas of lemon zest, green apple and crunchy pear, layered with white flowers, fresh herbs and a subtle chalky, stony note that speaks of its Burgundian origins. On the palate, this Aligoté is brisk and linear, driven by high, clean acidity that gives a mouthwatering, saline edge. Citrus (lemon, lime and a hint of grapefruit) is joined by green apple and a touch of unripe stone fruit, wrapped in a fine mineral backbone. The texture is sleek rather than creamy, with a refined, dry finish that leaves a lingering impression of citrus peel and wet stone. Production
Chapuis Frères work with carefully selected parcels in Burgundy, favoring cooler sites and limestone-rich soils that are ideal for producing vivid, aromatic Aligoté. The vineyards supplying this cuvée are farmed along organic, low-intervention principles, with a focus on healthy, balanced vines and modest yields. Grapes are picked relatively early to preserve natural acidity and freshness, then gently pressed and fermented with indigenous yeasts. Elevage is carried out mainly in stainless steel on fine lees, with minimal intervention and low sulphur, to capture the grape’s precision, texture and sense of place without masking it with heavy oak.

Food & Serving
This Bourgogne Aligoté is an excellent match for shellfish (especially oysters, mussels and clams), crudo, simple white fish dishes, ceviche, sushi and lightly grilled seafood. It also works beautifully with goat’s cheese, fresh cheeses, vegetable tarts, salads with citrus dressings and classic Burgundian gougères. Serve well-chilled, around 8–10°C, to underline its grip and minerality. Decanting is not essential, but a brief splash in a carafe or a few minutes in the glass can help the aromas open up and soften the initial edge of acidity.
