Tasting Notes
In the glass, the wine presents a luminous pale gold color with subtle green reflections, signaling freshness and youth. The nose is detailed and expressive, opening with notes of ripe citrus and stone fruits, such as lemon zest, white peach and pear, intertwined with delicate white flowers, fresh almond, and a fine chalky minerality. On the palate, the 2022 is both elegant and complex, with a beautiful tension between fruit and structure. The attack is supple, showing juicy, well-defined fruit and subtle floral tones, followed by nuances of almond, a light creaminess and a persistent, mouthwatering minerality from the limestone soils. The acidity is bright yet finely integrated, giving the wine lift and precision, while the finish is long, clean and saline, leaving lingering notes of citrus peel and crushed stone. Enjoyable now for its vibrant, youthful charm, it also has the structure to develop further complexity over the next 5–8 years, gaining more hazelnut, honeyed and brioche nuances with time in bottle.
Production
The vines for this Chassagne-Montrachet were planted in 1989 on a high-quality limestone plateau, a terroir that naturally delivers excellent drainage and ideal water management in both wet and dry years. This stony, calcareous soil underpins the wine’s pronounced minerality and linear profile. The grapes are carefully harvested—typically by hand to ensure optimal selection in the vineyard—then gently pressed to preserve aromatic purity. Fermentation and élevage take place with a measured, supportive use of oak, a hallmark of Lamy-Pillot’s style: enough barrel influence to bring texture and complexity, but never so much as to overshadow the terroir. The result is a naturally expressive Chardonnay where fruit, minerality and subtle oak are held in precise balance.
Food & Serving
This Chassagne-Montrachet is a superb partner for refined dishes, particularly those that highlight texture and subtle flavors. Think butter-poached or grilled turbot, sole meunière, seared scallops, roasted chicken with morel sauce, or veal in a light cream reduction. It also pairs beautifully with lobster, langoustines, and delicately seasoned sushi or sashimi, as well as fine soft cheeses like Brie de Meaux, Chaource or young Comté. Serve at 10–12°C (50–54°F) to emphasize its freshness and aromatic detail; slightly warmer temperatures will bring out more of the creamy and nutty notes. A light decant of 20–30 minutes, or simply opening the bottle a bit before serving, can help the wine unfurl its floral and mineral complexity.

Domaine Lamy-Pillot was founded in 1973 when René Lamy and Thérèse Pillot—both from long-established winegrowing families—married and established their estate in the hamlet of Morgeot on the outskirts of Chassagne-Montrachet. The Pillot family traces its roots in the commune back to 1595, giving the domaine deep historical ties to one of Burgundy’s most prestigious Chardonnay terroirs. Today, the 20-hectare family estate spans 27 different appellations, primarily in Chassagne-Montrachet and Saint-Aubin, and is run by the next generation: daughters Florence and Karine and their husbands. Since 1998, Florence and her husband, oenologist Sébastien Caillat, have been responsible for vinification, bringing formal training from Beaune, Strasbourg and Dijon, as well as extensive experience abroad. Under their stewardship, Lamy-Pillot has become known for precise, terroir-driven wines that use oak judiciously, allowing the character of each vineyard site to shine with clarity and elegance.
