Tasting Notes
In the glass, the 2016 Les Tosses is deep, inky ruby with a vibrant, almost electric rim that hints at both concentration and freshness. The nose is intensely mineral and complex, opening with graphite, wet slate and crushed rock, then unfolding into layers of red and black cherries, wild berries, violets, dried herbs and a fine thread of exotic spice. On the palate, this is powerful yet finely etched. Dense, pure fruit – black cherry, plum skin and wild raspberry – is wrapped around a core of saline, rocky minerality that clearly speaks of Priorat’s dark schist soils. The tannins are firm and finely grained, giving structure without harshness, while the elevated site brings a bright, driving acidity that keeps everything lifted and precise. Subtle notes of old oak – a hint of smoke, cedar and sweet spice – sit in the background rather than dominating. The finish is long, layered and harmonious, with lingering notes of graphite, cherry and cool stone. Built for the long haul, this 2016 has excellent aging potential; over the next 10–20 years it will gain even more complexity, silkier texture and tertiary nuances of leather, tobacco and dried flowers.
Production
Les Tosses comes from a very old, steeply terraced vineyard near Torroja del Priorat, planted entirely to Cariñena on dark, fractured slate (llicorella) at considerable altitude. This high, stony site naturally limits yields and concentrates the fruit while preserving freshness and acidity. Farming is fully biodynamic, with great emphasis on living soils and minimal intervention, and grapes are harvested by hand due to the extreme slope of the vineyard. In the cellar, Dominik Huber follows a traditional, low-extraction approach inspired by Burgundy: whole-cluster fermentation (vinification entière), no pumping over or aggressive punch-downs, and a gentle maceration to avoid overt power. The wine is then aged in large, neutral foudres rather than small barriques, allowing slow oxidation and textural refinement while keeping oak influence subtle and in the background.
Food & Serving
This is a serious, gastronomic red that shines alongside richly flavored, refined dishes. Think slow-braised lamb shoulder with rosemary, duck breast with cherry or berry sauces, grilled Iberian pork, venison, or earthy dishes built around wild mushrooms and root vegetables. Aged hard cheeses like Manchego or Comté also make excellent partners. Serve at 16–18°C (60–64°F) to highlight both its depth and freshness. Decanting is strongly recommended: give it at least 1–2 hours in a decanter in its youth to open the aromatics and soften the tannins; mature bottles will benefit from a gentle, shorter decant to remove sediment and allow the wine to unfurl.

Terroir al Límit was founded in the early 2000s in Priorat by South African winemaker Eben Sadie and German-born wine lover Dominik Huber, after the two met and worked harvests together with the Pérez family at Mas Martinet and Cims de Porrera. What began as a small, experimental project in Torroja quickly evolved into one of Priorat’s most influential and admired wineries. From 2007 onward, under Huber’s full-time leadership, Terroir al Límit shifted decisively away from heavily extracted, oak-driven styles toward a more transparent, terroir-focused philosophy: biodynamic viticulture, whole-cluster fermentations, large neutral foudres and minimal use of sulfur. This quiet revolution helped redefine the image of Priorat, showing that the region’s old vines and dramatic slopes can produce wines of tension, elegance and nuance, not just sheer power. Les Tosses, as one of their flagship single-vineyard bottlings, stands at the pinnacle of this vision and is widely regarded as one of the great red wines of Priorat.
