In the glass, 2013 Salon S Le Mesnil shows a brilliant, pale gold hue, shot through with silvery highlights and a filigree stream of ultra‑fine, persistent bubbles. The nose is detailed and refined, opening with white flowers, lemon zest and grapefruit, before deepening into green apple, white peach and nuances of toasted brioche, roasted almonds and a chalky, sea‑breeze minerality. On the palate, this is both crystalline and intense: a vivid spine of acidity frames flavors of citrus oil, crisp pear and white peach, layered with subtle hints of honey, fresh pastry, toasted nuts and a saline, limestone‑driven finish. The mousse is extremely fine, giving a silky, almost weightless texture that carries through to a very long, precise and mouth‑watering aftertaste. Production
Salon S Le Mesnil is sourced exclusively from old‑vine Chardonnay parcels in the grand cru village of Le Mesnil‑sur‑Oger, where deep chalk soils and a cool, east‑to‑southeast exposure yield grapes of remarkable tension, minerality and aromatic purity. The vineyards are farmed with meticulous care, and harvest is carried out by hand to ensure that only perfectly ripe, healthy clusters reach the press. As is Salon’s hallmark, the wine is made solely from Chardonnay (no reserve wines, no blending with other crus) from a single vintage, and Salon only declares a vintage in years considered truly exceptional. Fermentation is traditionally carried out in stainless steel to preserve purity and freshness, followed by an extended period of aging on the lees in bottle—far longer than the regional norm—to build depth, texture and complexity. The 2013 was finished with a very low dosage, allowing the character of Le Mesnil’s chalky terroir to shine through with maximum clarity.
