Domaine Thillardon’s Chénas Chassignol 2023 is a serious, ageworthy expression of Beaujolais, crafted from old-vine Gamay rooted high on decomposed granite slopes. This cuvée stands out for its depth, structure, and darker aromatic profile, offering a very different side of Beaujolais than the typical light and fruity style. From one of the rising-star domaines of the region, it shows just how profound Chénas can be when treated with care and ambition.

Tasting Notes
In the glass, the 2023 Chassignol is a deep, vibrant ruby with a youthful purple rim, hinting at both concentration and energy. The nose immediately suggests a darker, more brooding style of Gamay: Chinotto orange, sour cherry and blood orange peel mingle with rooibos tea, dried herbs, and a whisper of tobacco leaf, all wrapped around a firm spine of stony, earthy minerality. On the palate, the wine is compact and muscular, with a tightly woven core of fleshy, dark red fruit—think black cherry, wild raspberry, and plum skin—lifted by bright, mouthwatering acidity. The tannins are firm yet fine-grained, giving the wine a serious architecture without sacrificing drinkability. Layers of crushed rock, subtle spice and herbal complexity unfurl with air, leading to a long, dry, mineral finish. While already impressive in its youth, this is clearly built to age; expect it to evolve beautifully over 8–12 years, gaining further aromatic complexity and softening its structure.

Production
Chassignol comes from old Gamay vines planted high on the slopes of Chénas, where decomposed granite soils, good drainage, and cooler elevations naturally limit yields and intensify flavor. Domaine Thillardon farms these parcels organically with strong biodynamic influence, working the vines by hand to preserve biodiversity and terroir expression. Harvest is carried out manually at optimal ripeness, allowing careful selection of healthy, concentrated fruit. In the cellar, Thillardon favors whole-bunch fermentation and a gentle, low-intervention approach—typically semi-carbonic maceration with native yeasts, minimal extraction, and élevage in neutral vessels—to preserve the purity of fruit, highlight the granite-driven minerality, and showcase the structure that makes Chassignol one of the most ageworthy wines in their lineup.

Food & Serving
This structured Chénas is a superb partner for flavorful, savory dishes: think roast duck with cherries, herb-crusted lamb, grilled pork chops, mushroom risotto, or charcuterie and aged, semi-hard cheeses like Comté or Tomme. Its acidity and minerality also make it a fine match for roasted root vegetables, lentil dishes, and game birds. Serve at 14–16°C (57–61°F) to highlight freshness while allowing the aromatics to unfurl. A 45–60 minute decant is recommended in its youth to soften the tannins and bring out the darker citrus, tea, and tobacco nuances.
