Handcrafted in tiny quantities, this cuvée has become a quiet insider’s favorite for those seeking white Burgundy character without the grand cru price tag.

Tasting Notes
In the glass, Les Femelottes shows a pale lemon color with bright, silvery reflections hinting at its freshness and youth. The nose opens with pure notes of lemon zest, crisp green apple and white peach, layered with delicate floral tones of acacia and hawthorn. Subtle hints of fresh butter, toasted hazelnut and a light chalky minerality reveal the influence of quality Burgundian élevage. On the palate, the wine is precise and finely textured, with a lively, mouthwatering acidity that frames its ripe stone-fruit core. Citrus and orchard fruits are supported by a gentle creaminess from time on the lees, giving a supple mid‑palate without ever feeling heavy. The finish is long, clean and saline, with a finely etched mineral line that invites another sip. Production
Les Femelottes is drawn from Chardonnay vines rooted in limestone-rich soils with layers of clay and marl, just below the famed slopes of Puligny-Montrachet. This terroir brings both freshness and a subtle, chalky depth to the wine. Grapes are harvested by hand at optimal ripeness to preserve acidity and aromatics, then gently pressed. Fermentation typically takes place in French oak barrels, with a judicious proportion of new wood to add texture rather than dominate the fruit. The wine is aged on its fine lees, with periodic bâtonnage (lees stirring) to build complexity and mouthfeel, before being bottled with minimal intervention to retain purity.

Food & Serving
This Bourgogne Blanc is a versatile partner at the table, shining alongside dishes such as seared scallops, grilled prawns, steamed mussels, and simply prepared white fish with lemon and herbs. It also pairs beautifully with roast chicken, creamy risottos, vegetable tarts, and soft-rind cheeses like Brie or Chaource. Serve at 10–12°C (50–54°F) for optimal expression of fruit and minerality. A brief 20–30 minutes in a carafe can help the wine open up aromatically, especially in its youth.

If you would like to taste well-balanced, elegant wines from the great Burgundy producers, but quickly find them too expensive, you can always turn to their 'entry level' wines, which are a bit more affordable while still delivering top-quality flavor. This one from David Moret is a really good example of that.
