Produced from a single, walled premier cru vineyard solely owned by the domaine, this wine marries precision, mineral intensity and generous 2018 ripeness in a remarkably refined style. As a monopole within one of Chassagne’s most prized lieux-dits, Clos du Cailleret offers a rare glimpse into the pure, undiluted expression of this exceptional terroir.

Tasting Notes
In the glass, the 2018 Clos du Cailleret presents a bright, luminous straw-gold color with green reflections, indicating both concentration and freshness. The nose is detailed and layered, revealing notes of ripe lemon, white peach, and crunchy pear, woven together with crushed stone, chalk, and a gentle smokiness. Subtle hints of toasted hazelnut, fresh butter, and white flowers (acacia, hawthorn) develop with air, underlining the wine’s Burgundy pedigree. On the palate, the wine is both powerful and tightly controlled, with a fine, chiselled acidity that supports a generous, silky texture. Flavors of citrus zest, stone fruit and saline minerality build across the mid-palate, joined by nuances of brioche, almond and delicate spice from well-judged oak. The finish is long, focused and mouthwatering, with a lingering impression of limestone and citrus peel. While already approachable in its youth with a short decant, this 2018 has the structure and concentration to evolve beautifully over 8–15 years, gaining further complexity and tertiary nuance.

Production
Clos du Cailleret is a distinguished premier cru parcel in Chassagne-Montrachet, characterized by thin, stony soils rich in limestone over a well-draining, rocky subsoil—ideal for Chardonnay of finesse and precision. Ramonet’s vines here are traditionally tended, with meticulous work in the vineyard to control yields and ensure optimal ripeness, often with careful, selective hand harvesting to bring only pristine clusters to the cellar. Vinification follows classic Côte de Beaune white Burgundy methods: gentle pressing of whole clusters, fermentation in oak barrels (with a judicious proportion of new wood), followed by extended aging on fine lees to build texture and complexity. The overarching philosophy is minimal intervention, allowing the Clos du Cailleret terroir to speak clearly through the wine.

Food & Serving
This Chassagne-Montrachet 1er Cru is a superb partner for refined dishes, especially those highlighting shellfish and white meats. Think lobster with beurre blanc, seared scallops, turbot or sole with a delicate cream sauce, roast chicken with morel mushrooms, or veal in a light jus. It also pairs gracefully with aged Comté, Beaufort, or finely matured goat cheeses. Serve chilled but not too cold, ideally around 11–13°C (52–55°F), to allow the aromatics to fully open. A 30–45 minute decant for young bottles, such as the 2018, helps integrate the oak, release the minerality and bring out the wine’s full textural depth.

One of my absolute favourite producers!

Here it is the monopole vineyard located right next to the estate and therefore a true passion project for Ramonet; they have full control of the vineyard, which is enclosed by a small stone wall—hence the name "clos".
