Champagne Bollinger Extra-Brut R.D. 2008 is a remarkable prestige cuvée that showcases Bollinger’s signature depth, precision, and remarkable aging character. R.D. stands for “Recently Disgorged,” a hallmark of Bollinger’s philosophy that preserves freshness while delivering extraordinary complexity from long cellar maturation.
Tasting Notes
In the glass, it typically shows a luminous golden hue with a fine, persistent mousse. The nose is layered and expressive, often revealing brioche, toasted almonds, citrus peel, baked apple, and hints of honey, spice, and chalky minerality.
On the palate, the wine is taut yet generous, with vivid acidity, creamy texture, and deep flavors of orchard fruit, pastry, dried citrus, and subtle oxidative notes that add sophistication. The long lees aging gives it impressive breadth and finesse, and it has excellent aging potential, with the structure to continue evolving beautifully for years.
Production
Bollinger is based in the village of Aÿ, at the heart of Champagne, where the vineyard holdings are known for their exceptional chalk and clay-limestone soils. For R.D. 2008, the fruit is harvested by hand and vinified with great care, with a strong emphasis on preserving the character of the vintage and the house style. Extended aging on lees, followed by late disgorgement, is central to the wine’s depth, texture, and signature complexity.
Food & Serving
This Champagne pairs beautifully with refined dishes such as roast chicken, lobster, scallops, truffle risotto, or aged hard cheeses. Serve chilled at around 8–10°C. Decanting is not usually necessary, but allowing it a few minutes in the glass can help the aromas open up further.
