My name is Patrick Jensen, and my journey into the world of wine began at the age of 17, when I started my waiter training. It was here that my interest in gastronomy and wine was awakened, and ever since, I have been driven by a great curiosity to learn more.
Throughout my career, I have had the pleasure of working at Noma, AOC and Frederiksminde, each of which has helped shape my approach to wine. At Noma, I learned to appreciate wines with energy, freshness and a strong expression of their origin. At AOC, I gained a deeper understanding of the classic wine regions, the great wines, and the precision behind both wine and service. Frederiksminde taught me the importance of balance and the interplay between wine, food, and the overall experience around the table.
Today, I am Head Sommelier at Restaurant Aure, where I continue to explore the many facets of wine. What fascinates me most about wine, however, is not only what is in the bottle. To me, wine is just as much about people, experiences, and memories. The best bottles are not necessarily the most expensive or the rarest, but often those shared with the right people at the right time.
Wine has a unique ability to bring people together around a table, create conversations, and become part of the moments you remember many years later. That is why I always seek wines with personality, history, and authenticity – wines that not only taste good, but also create an experience worth remembering.
It is that passion and curiosity that I look forward to sharing.
